Quinoa Salad

  • 1 cup of cooked quinoa
  • ½ mango cubed
  • Fresh herbs- use about ¼ cup: basil, coriander, parsley
  • 1 cup of greens- spinach, lettuce, watercress
  • Fresh tomatoes- if available

To decorate: radish, flowers, pomegrate seeds, avocado if in season
