Gluten-Free Vegan Avocado Toast

Easy, delicious, healthy, gluten-free, and vegan!

This avocado toast recipe is one of my go-to’s when I need an easy recipe that satisfies my cravings. This can be for a healthy vegan breakfast, lunch, or dinner.

I am presenting two toasts for you to enjoy: One is a gluten-free vegan avocado toast with kimchi and mushrooms, and the other is a gluten vegan free toast with tempeh bacon bits.

For the gluten-free eaters out there, we use a Japanese sweet potato as our “toast” and it can be used for multiple applications. So be creative! You will be amazed at how well it works as a foundation for things like gluten-free pizza, toast, open-face sandwiches – like I said, be creative.
