Lion´s Mane Stir Fry

I am fascinated by Lion's Mane, a type of mushroom that has been used in traditional medicine for centuries and is now gaining popularity for its potential cognitive and neurological benefits. Its unique appearance and flavor make it a versatile ingredient that can be incorporated into various dishes, and its ability to support brain function and mood regulation makes it an exciting addition to any wellness routine. Here is my delicious stir fry- a simple, yet powerful recipe that will leave everyone wanting more!

Ingredients:

  • 1/2 lb. fresh lion's mane mushrooms

  • 2 tbsp. avocado oil

  • 1 onion, sliced

  • 2 cloves garlic, minced

  • 2 tbsp. tamari sauce

  • 1 tbsp. arrowroot or cornstarch

  • 1/4 cup water

  • Salt and pepper, to taste

  • Pinch of red pepper flakes or as desired

  • Rice or noodles, for serving

  • Scallions for decoration

METHOD:

  1. Clean the lion's mane mushrooms by removing any dirt or debris, then tear them into small pieces.

  2. Heat the avocado oil in a large pan over medium-high heat. Add the onion to the pan and sauté for 2-3 minutes until slightly softened. Add the minced garlic and sauté for another minute until fragrant. Add the red pepper flakes and let them infuse the vegetables. Next, add the lion's mane mushrooms to the pan and cook for 5-7 minutes until they are tender and slightly browned.

  3. In a small bowl, mix together the tamari sauce, arrowroot, and water until well combined.

  4. Pour the sauce over the mushrooms and vegetables and stir to combine. Cook for an additional 2-3 minutes until the sauce has thickened and everything is well coated.

  5. Season with salt and pepper to taste.

  6. Serve over rice or noodles
