Indian Lentil Dahl

  • 200 gr red or yellow lentils
  • 1 tbs olive oil
  • 2 tsp of curry powder
  • 1 tsp curcuma
  • 1 red onion chopped
  • ½ liter Vegetable bouillon
  • 1 cup Coconut milk
  • 1 tsp ginger powder
  • 1 tsp of fennel seeds
  • Salt and pepper to taste

In a pot add the olive oil and add the onions until translucent with the fennel seeds; until the aroma is released. Add curry, curcuma and ginger powder. Add the bouillon and lentils; cook until lentils are done. Add coconut milk, salt and pepper to taste. Serve with rice, and chopped coriander
